In January 2019 the Swartzentruber family became the operators of Spruce Knob Maple, the areas largest maple syrup producer. There are 7 of us boys, and Dad, making this a family operation, and we look forward to sharing this experience with our children.
Producing Maple syrup is a longtime tradition of collecting sap from maple trees and cooking it down into syrup. It's hard work, but the reward is all natural, pure maple syrup. Traditionally served at breakfast with pancakes and waffles, we enjoy experimenting with baking, infused syrups, and meats.
